• 1 cup pecans
• 1 (heaping) cup Medjool dates, pitted
• 1 portion cup PS Snacks Chocolate Chip Cookie Dough
• 1 tbsp coconut oil, melted
• 2 apples, chopped
• 2 tbsp maple syrup
• 1 tbsp lemon juice
• 1 tsp cinnamon
• ½ tsp ginger
• ¼ tsp nutmeg
To make the crust: add the pecans, dates, Cookie Dough & melted coconut oil to a food processor and pulse to combine. Evenly divide the mixture into 12 lined muffin cups and press firmly to form a crust. Freeze.
To make the filling: add the chopped apples to a mixing bowl and stir in the maple syrup, lemon juice, cinnamon, ginger and nutmeg to coat. Transfer to a microwave-safe bowl and microwave for ~2 minutes, until the apples are tender. Remove the crusts from the freezer, then evenly scoop the apple pie filling onto the crusts. Refrigerate and enjoy!
