Blondie Cookie Dough Sandwich

  • 1 c. almond flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • 1 egg
  • ⅓ c. coconut sugar
  • ⅓ c. coconut oil
  • ½ c. almond butter
  • ½ - 3 oz. cup Cookie Dough
  • 2 tsp. vanilla  
  • ½ c. chocolate chips
  • 3 - 3 oz. cups Cookie Dough for filling

Preheat the oven to 350 degrees and grease an 8x8 baking dish.
In a small bowl, whisk together the egg, coconut sugar, and coconut oil. Stir in the almond butter, 1.5 ounces of Cookie Dough and vanilla. In a large bowl, whisk almond flour, baking soda, salt and cinnamon. Add the wet ingredients to the dry and stir until completely combined. Add in chocolate chips.

Pour the batter into an 8x8 baking dish and bake for 18-20 minutes. Let the blondies cool completely, then cut the pan of blondies into half so you have a top and bottom. Top the bottom blondie piece with 3 containers of cookie dough and place the top blondie piece on top, like a sandwich.

Cut into squares and enjoy.
