Caramel Apple Mousse
1 large apple, chopped
1 (heaping) tsp pumpkin pie spice
1 package Vanilla Bean Instant Pudding
2 1/2 cups non-dairy milk
6 Medjool dates, pitted (soak in warm water for at least 20 minutes before blending, then drain)
1/2 tsp vanilla
optional toppings: whipped cream, pecans, apples
Add the apples to a microwave-safe bowl and toss with the pumpkin pie spice.
Microwave for ~2-3 minutes, until the apples are cooked and tender. Remove from the microwave and set aside.
Mix the Instant Pudding and non-dairy milk in a blender until smooth.
Add in the dates, vanilla and apple-spice mixture into the blender and blend again until smooth.
Refrigerate the pudding to allow it to chill and set.
Serve in 6 bowls with any toppings!
