Chocolate Raspberry Truffles
  • 10 Medjool dates, pitted
  • 3 portion cups P.S. Snacks Cookie Dough (Chocolate Chip or Fudge Brownie)
  • ⅓ cup cocoa powder
  • ⅓ cup oat, coconut or almond flour
  • 1 tbsp + 1 tsp freeze dried raspberries (blend or food process into a powder)
  • ⅔ cup chocolate chips, divided
Add the dates, Cookie Dough, cocoa powder and 1 tbsp powdered freeze-dried raspberries to a food processor and blend to combine. Transfer to a mixing bowl and stir in ⅓ cup of the chocolate chips. Roll the mixture into bite-sized balls. Freeze.
Melt the remaining ⅓ cup chocolate chips. Remove the bites from the freezer and dip (or you can drizzle) each ball in the melted chocolate. Sprinkle the remaining raspberry powder. Store in the refrigerator in an air-tight container!
