- 1 cup cashews
- 3 tbsp. almond butter
- 2 tbsp. maple syrup or honey
- 1 3 oz. cup Cookie Dough, any flavor
- 1 cup chocolate, melted (we like Hu Kitchen or Eating Evolved)
For the base, blend cashews in a food processor until finely pureed. Add in almond butter and sweetener of choice and blend until well combined and can stick together when pinched. Press flat into 8x8 pan. Top with a layer of cookie dough. Freeze for one hour. Cut into bars and cover in melted chocolate. Store in the refrigerator or freezer!
