- 3 - 3 oz. cups Chocolate Chip Cookie Dough
- 1 cup unsweetened shredded coconut
- 2 tbsp coconut flour
- 1 tbsp honey
- 1 tbsp non-dairy milk or water
- 1/2 cup paleo chocolate bar, melted
Preheat the oven to 300 degrees. Toast the coconut in the oven for 5-8 minutes (watch carefully, as it burns very easily).
In a bowl, mix together the Cookie Dough, coconut flour, honey, and liquid of choice, then stir in ½ cup of the toasted coconut. Form into cookies and using the back of a wooden spoon, make a hole in the center. Freeze for 30 minutes. While the cookies are freezing, melt the chocolate.
After 30 minutes, dunk the bottoms of the rounds in melted chocolate, then drizzle more over top. Enjoy! Store in the refrigerator or freezer.
