Cookie Dough Snack Bars

  • 1 cup oats
  • 1 cup nuts
  • ½ cup dates, pitted
  • ½ cup Cookie Dough
  • ¼ cup nut butter
  • ¼ cup honey
  • chocolate, melted (we like Hu Kitchen or Eating Evolved) to drizzle


Use a food processor to blend oats into a fine flour. Add in the nuts and blend until combined. Add the dates, Cookie Dough, nut butter, and honey and process until a ball forms (approximately 2 minutes). Press the mixture into 8x8 pan and put in the freezer.

After 30 minutes, cut into bars and drizzle with melted chocolate.

Store in the refrigerator or freezer!
