Cookies N Cream Protein Bars


• 1 cup oat flour

• ½ cup vanilla plant-based protein powder

•  ¼ tsp salt

•  4 portion cups P.S. Snacks Cookie Dough (we like Chocolate Chip or Fudge Brownie for this!)

•  2 tbsp coconut oil, melted

• 1 tbsp honey

• 6 Catalina Crunch Keto Sandwich Cookies (or any cookie alternative), crushed

• ¼ cup chocolate chips



Combine the dry ingredients (oat flour, protein powder & salt) in a mixing bowl. In a separate small bowl, combine the Cookie Dough with the melted coconut oil and honey until smooth. Add the wet ingredients to the dry, and mix into well-combined (you can also use a food processor).
Stir in the crushed cookies and chocolate chips. 
Press the mixture into the bottom of a parchment paper-lined loaf pan and refrigerate for at least 2 hours. Once the mixture solidifies and sets, cut into bars!
