Chocolate Nougat Candy Bars (Adapted From Liz Moody's 'Healthier Together' Cookbook)
3 tbsp melted cacao butter or coconut oil
2 tbsp non dairy milk
1 tbsp maple syrup
1 tsp vanilla extract
1/2 cup almond flour
1/8 tsp sea salt
1/4 cup Bites
15 Medjool dates
1 1/4 cups dark chocolate
Line a baking sheet with parchment paper.
Prepare the filling:
In a bowl, mix together 2 tbsp melted cacao butter, milk, maple syrup, vanilla, almond flour and salt until well combined.
Stir in the Bites.
Assemble the candy bars:
Open each date lengthwise (to remove the pit) and stuff with a spoonful of the filling, then close the date as best you can.
Place on the prepared baking sheet and freeze for ~15 mins.
Melt the chocolate with the remaining 1 tbsp cacao butter.
Dip each date into the chocolate, using a spoon to coat completely.
Return the chocolate-covered dates to the baking sheet and sprinkle with Maldon salt.
Chill in the refrigerator until the chocolate is set, then store in the fridge!
