Mint Chip Cookie Dough Crunch Bars


• 1 cup chocolate chips 

• 1 tsp coconut oil

• ½ tsp peppermint extract

• 2 portion cups PS Snacks Fudge Brownie Cookie Dough

• 1/2 cup quinoa crisps



Melt the chocolate chips with the coconut oil, then stir in the peppermint extract. Transfer to a bowl and mix with the cookie dough until smooth. Stir in the puffed quinoa crisps. Pour into a parchment paper-lined loaf pan and press down firmly. Refrigerate for at least two hours, then cut into bars. Store in an air-tight container in refrigerator or freezer!
