Minty Cookie Dough Bars

  • 2- 3 oz. cups Fudge Brownie Cookie Dough
  • 1 cup crushed up gluten-free cookies (we love Simple Mills)
  • 1/4 cup maple syrup
  • 1/4 tsp peppermint extract
  • 1/2 cup chocolate chips
  • 1 tbsp coconut oil

 

In a food processor, blend up cookies until they turn into small crumbs. Add in maple syrup, Cookie Dough, and peppermint extract and process until everything is combined. Press the mixture into a loaf pan and freeze for one hour. While that is freezing, melt chocolate chips and coconut oil in a small bowl in the microwave in 30 seconds increments. Take bars out of freezer and dip into melted chocolate.

Store in the freezer. Enjoy!
