No-Bake Cookie Dough Cookie Bites

  • 1 ¼ cup rolled oats
  • ½ cup shredded coconut
  • ¼ tsp. salt
  • 1/2 cup chocolate chips 
  • ¼ cup coconut oil, melted
  • 2 tbsp. honey
  • 1 tsp. vanilla
  • 2 3-oz. cups Cookie Dough

For chocolate dipping:

  • ½ cup chocolate chips
  • 1 tsp. coconut oil

In a large bowl, mix the oats, coconut, salt and chocolate chips. In a separate small bowl, mix the melted coconut oil, honey and vanilla. Add the wet ingredients to the dry ingredients and stir until combined. Stir in the Cookie Dough. Roll the mixture into balls. Store in the freezer for at least 30 minutes.

Melt the chocolate chips with 1 tsp. of coconut oil in 30 seconds increments in the microwave until fully melted. Remove the cookies from the freezer and dip the bottoms into the melted chocolate. Allow the chocolate to harden in the refrigerator the enjoy!
