No-Bake Pumpkin Pie
*If you want to keep it simple, you can buy a pre-made crust!
1 package Vanilla Bean Instant Pudding
1 15-oz can pumpkin puree
1 1/2 tbsp pumpkin pie spice
2 tbsp maple syrup
1 tub (non-dairy) whipped topping, slightly defrosted
For the crust:
For the filling:
Add the granola butter to a parchment paper-lined pie pan. Alternatively, you can use a store-bought pie crust or a crust of your choosing!
To prepare the filling: use a food processor to blend the Vanilla Bean Instant Pudding, pumpkin puree, pumpkin pie spice and maple syrup until smooth.
Transfer the mixture to a bowl and fold in the slightly defrosted whipped topping.
Pour the filling over the crust and place the pie in the freezer to set.
To serve: remove the pie from the freezer and allow it to defrost slightly, then top with whipped cream and cut into slices!
