Combine all of the ingredients in a large mixing bowl. Shape the dough into 10-12 balls and place on a parchment paper-lined baking sheet. Freeze for 1 hour. After an hour, melt the chocolate chips. To coat: remove the balls from the freezer. Dip the top of a cake pop stick into the melted chocolate, then insert into the center (halfway through) of each ball. Next, dip each ball into the melted chocolate until covered. Refrigerate in an air tight container & enjoy!
