Pecan Pie Pudding Cookies
1 package Vanilla Bean Instant Pudding
1 ½ cups almond flour
½ tsp baking powder
1 tsp cinnamon
2/3 cup pecans
1/3 cup maple syrup
1/3 cup coconut oil or ghee, melted
Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper.
Combine all of the ingredients in a mixing bowl.
Drop the cookie dough by rounded spoonfuls onto the lined baking sheet, then flatten slightly.
Bake for 14-16 minutes. Makes 12-18 cookies.
