• 3 portion cups P.S. Snacks Cookie Dough (PB or Chocolate Chip)
• ½ cup pumpkin purée
• 1 cup almond, coconut or oat flour
• ¼ cup maple or date syrup
• 1 tsp pumpkin pie spice
• ⅔ cup white chocolate chips
Combine the Cookie Dough, pumpkin puree, your, syrup & pumpkin pie spice in a mixing bowl until smooth. Freeze for 30 minutes. Remove the mixture from the freezer and roll into ~10 balls. Place on parchment paper and freeze again, for at least an hour.
Melt the white chocolate chips (in 30 second increments in the microwave). Remove the bites from the freezer. Dip each bottom in the melted white chocolate and place on the parchment paper. Drizzle the remaining melted white chocolate over the bites. Store in the freezer!
